Cranberry Wild Rice Muffins
Yield: 12 muffins
1 1/2 cups sifted all purpose flour
1 Tbsp baking powder
1/2 tsp salt
1/4 cup sugar
1/3 cup fresh cranberries (chopped)
1/2 cup milk
1 1/2 tsp orange rind
1/4 cup orange juice
1 egg lightly beaten
4 Tbsp melted butter
1 cup cooked Wild Rice
- Sift dry ingredients together into mixing bowl.
- Combine all other ingredients and stir into dry ingredients until well blended. Spoon into greased muffin cups.
- Bake 425 degrees F for 25 minutes.

Wild Rice Fruit Dessert
3 cups Wild Rice
3/4 cup brown sugar
dash ground coriander
fruits or fresh berries
3/4 cup slivered almonds or broken walnuts
heavy cream, whipped if preferred
- Combine all ingredients except for cream. Let set for a few hours.
- Top with cream when served.
